uv (pip alternative) build for the voyager-sdk. Many organizations are switching over to uv due to its many benefits over pip.
- This would speed up setup of the sdk and allow easier merging with development environments

It took us a while but uv install now works!

Just install uv and prefix the pip commands with `uv`
